BBQ New Potato Skewers
Ingredients
750g new potatoes, do not peel
3 tablespoons extra virgin olive oil
Salt and fresh ground black pepper to taste
Method
Cook potatoes in boiling salted water for about 15 mins or until tender. Be careful not to overcook them or they will fall apart.
Slice the potatoes in half, add to a mixing bowl and coat evenly with olive oil. Add the seasoning to taste.
Thread potato halves on to pre soaked bamboo skewers. Depending on the size of the potatoes you will need about 4-6 skewers for 750g.
Grill on medium heat coals until lightly charred, turning on a regular basis to get an even colour.
Serve whilst hot.
